Ella and I decided Banana Muffins sounded really good today!
She was such a good helper, and loved putting all the ingredients into the mixing bowl..
Here she is smashing the bananas and putting them in
First time seeing the mixer going, she was a bit unsure!
Cracking the egg, well trying anyway
Getting the butter ready to put in the microwave to melt
Greasing the pumpkin shaped tins
I think this was her least favorite things to do, she wanted to wash her hands right after she
was done, she does not like icky stuff on her fingers!
Adding the flour mixture to the banana mixture
I love this picture of her peeking in the bowl. At first she was a little nervous of the mixer, It mixes really fast and is kinda noisy!
She even wanted to help with the dishes! I think at this point she thought she would wash her face with the dish sponge, yum!
I left Ella "washing the dishes" while I ran to switch the laundry. I heard her say uh oh, when I came back in she was scrubbing the floor with my dish sponge! I guess she dropped it and thought the floor looked messy! (which it was! covered in flour from my little helper!)
Baking is hard work!
The finished muffins! They are sooo good,
I've never made them with the yummy crumble topping!
(so they are a weird shape because I made them in pumpkin shaped cupcake tins,
but the pumpkin face didnt show up, and the crumble stuff was on the wrong side anyway, ha) Heres the recipe
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 bananas, mashed
- 3/4 cup white sugar
- 1 egg, lightly beaten
- 1/3 cup butter, melted
- 1/3 cup packed brown sugar
- 2 tablespoons all-purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter
* Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
*In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt.
*In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
*In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
*Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
